Protein Packed New York Style Cheesecake

The CLASSIC: New York Style Cheesecake! Rich, creamy, sweet - yet oh-so-loaded with fat, sugar, and carbs. Cheesecake is my all time favorite dessert, so I am super excited about this protein-packed spin on the classic New York Style Cheesecake. With a crust made from BetterBody Foods powdered peanut butter and ground almonds and a filling made from Greek yogurt, egg whites, and Quest Nutrition protein powder, this "recipe makeover" version cheesecake still delivers a punch of flavor and the creamy texture we all love, while sparing the unwanted calories, fat, and sugar that come along with your traditional slice.
Ingredients:
Crust
- 1/4 cup almonds (ground)
- 1/4 cup BetterBody Foods powdered peanut butter
- 3 teaspoons zero calorie sweetener
- 2 tablespoons vanilla unsweetened almond milk
Filling
- 2 cups vanilla nonfat Greek yogurt (low sugar - I used Dannon Light & Fit Vanilla Greek)
- 3/4 cup egg whites
- 1 scoop Quest Nutrition Vanilla Milkshake protein powder
- 2 teaspoons zero calorie sweetener
- 1/2 teaspoon vanilla extract
Directions:
Crust
Preheat oven to 325 degrees. Spray a round 8-inch springform pan with nonstick spray and set aside. Measure 1/4 cup whole almonds and place into a food processor and blend until ground to a powder. Combine ground almonds with BetterBody Foods powdered peanut butter, zero calorie sweetener (I use stevia), and 2 teaspoons vanilla unsweetened almond milk. Mix until combined completely and press into the bottom of the greased pan. Bake crust in the oven at 325 degrees for 8-10 minutes.
Filling
Combine nonfat vanilla Greek yogurt, egg whites, Quest Nutrition Vanilla Milkshake protein powder, zero calorie sweetener, and vanilla extract. Mix on low speed for about 2 minutes or until well combined. Pour over pre-baked crust and bake in the oven at 325 degrees for 40-50 minutes or until edges are lightly brown and top is solid.
Let the cheesecake cool completely and place in the refrigerator overnight. After refrigerating, slide a butter knife along the edges of the springform pan and remove the outside of the pan. Top with strawberries and Walden Farms zero-calorie chocolate syrup. Enjoy!
