Mini Zucchini Pizza Bites

Each mini pizza is only 14 CALORIES! You can eat 18 of these for 260 calories, only 4.4 grams of fat, and just 21 grams of carbs. In comparison, if you were to eat 18 of Totino's pizza rolls, you would be consuming a whopping 660 calories, 27 grams of fat, and 78 grams of carbs. These zucchini based pizza bites are a great way to pack in some veggies, cut calories, reduce fat, and throw out carbs while still getting that satisfying feeling of a delicious snack! - 1 large zucchini
- 1/4 cup pizza sauce - 3 ounces (3/4 cup) fat-free mozzarella cheese
- 10 turkey pepperonis (chopped)
- Salt, pepper, & chopped basil leaves to taste
- Nonstick cooking spray
Preheat oven to 400 degrees. Chop large zucchini into 18 slices, about 1/4 inch thick. Spray a dark nonstick baking pan with nonstick cooking spray and evenly place the zucchini slices on the pan. Spray the tops of the zucchini slices with nonstick spray and lightly dust with salt and pepper. Bake for 5-6 minutes in the oven at 400 degrees or until tender. Remove zucchini slices from the oven and top each slice with pizza sauce, fat-free mozzarella cheese, chopped turkey pepperonis, and chopped basil leaves. Place the mini pizzas back in the oven for 10-11 minutes or until cheese is melted and tops are lightly browned. Remove from the oven, let them cool, and pass them around for a fun, healthy snack!
