5 Ingredient Copy-Cat Peanut Butter Cups

Halloween is approaching quickly, and EVERYONE loves the classic Reese's Peanut Butter Cup! I decided to do a little research on America's favorite Halloween candy, and chocolate topped the list - leading with Reese's, M&M's, Snickers, Hershey's, and Kit Kats. According to USA Today, in 2012, Americans spent over $12.6 BILLION on chocolate alone! Not surprising, who DOESN'T love chocolate?!

There are actually many nutritional benefits of eating chocolate - when eaten the right way. Dark chocolate is full of antioxidants, has been linked to lower blood pressure, protects against heart disease, improves cognitive function, and can do wonders for your skin and complexion. Aim for the highest percentage of cacao possible - the higher percentage means that the bar contains more content from the natural, pure, cacao plant, and less added sugar.

These 5 Ingredient CLEAN Copy-Cat Peanut Butter Cups use Lily's Dark Chocolate Baking Chips as the main ingredient in the outer chocolate shell. I LOVE these chocolate chips, because they taste AMAZING, they are gluten-free, vegan, have NO ADDED SUGAR, and are 55% cocoa. Not to mention, they have 4 grams of fiber per serving! These chips are great for baking, topping, and snacking. Look for these sweet treats in the health food section at HyVee.

But let's not forget about the peanut butter filling! Anyone who knows me knows I could LIVE off of peanut butter, so I was super excited to take on a recreation of the candy bar that combines my two favorite things: chocolate AND peanut butter.

Betterbody Foods PBFit is a staple in my every day diet, and I use it quite frequently in the recipes that I create. The creamy consistency and bold chocolatey/peanut-buttery flavor it gives to everything you add it to with such a clean, whole food ingredient list just can't be beat! So of course, I had to mix it in to the filling of these Copy-Cat Peanut Butter Cups.

There are just 5 INGREDIENTS and 0.3 GRAMS of sugar in each of these copy-cat cups! (Compared to your typical Reese's Peanut Butter Cup, which contains 10.5 grams of sugar). Not to mention, these copy-cat cups contain 4.8 grams of fiber PER CUP, to keep you feeling full and satisfied longer than your typical bite of candy. Check out the recipe below:


- 1 bag Lily's Dark Chocolate Baking Chips

- 1/4 cup Jif creamy whipped peanut butter

- 2 tablespoons Betterbody Foods Chocolate PBFit

- 3 tablespoons unsweetened vanilla almond milk

- 3 tablespoons zero calorie sweetener (I use stevia)


Line a mini-muffin pan with 16 foil muffin lining tins and set aside. Measure out half of the bag of Lily's Dark Chocolate Baking Chips into a microwave safe bowl. Microwave chips for 30 seconds, stir, and microwave for another 30 seconds. Remove from microwave and stir in 1/2 tablespoon of stevia. Drop melted chocolate by teaspoonful into the lined muffin pan. Set aside.

Mix together peanut butter, Betterbody Foods Chocolate PBFit, unsweetened vanilla almond milk, and remaining 2 tablespoons of stevia in a medium bowl until combined. spoon by teaspoonful on top of the melted chocolate base in the muffin tins.

Melt the remaining Lily's Dark Chocolate Baking Chips using the process described above. Spoon the remaining chocolate over the layer of peanut butter filling until covered completely. Cover the peanut butter cups with aluminum foil and place in the freezer until set, about one to two hours. Remove from muffin tins and ENJOY!
