Flourless 6 Ingredient Peanut Butter Cookies

Peanut butter and DELICIOUS! Everyone loves a warm, soft, fresh baked peanut butter cookie! I eat A LOT of peanut butter, so I am super excited about this recipe that only has SIX ingredients. I love quick recipes like this one that don't require much preparation or time to bake. Especially as the semester comes to an end and finals begin, our time as college students is limited. But eating healthy does NOT have to be time consuming, boring, OR expensive. Less ingredients = less expense! These cookies may only have six ingredients, but they still maintain that chewy texture and salty-sweet flavor we ALL want in a peanut butter cookie! Not to mention, each cookie only has 1.6 GRAMS of sugar! Check out the recipe below!

Ingredients:

- 1 cup creamy peanut butter

- 1 scoop Quest Nutrition Vanilla Milkshake Protein Powder

- 1/3 cup zero calorie sweetener (I use stevia)

- 2 tablespoons Betterbody Foods PBfit

- 1/3 cup liquid egg whites

- 1 teaspoon vanilla extract

 

Directions:

Preheat oven to 350 degrees. Line a cookie sheet with foil and lightly coat with nonstick cooking spray. Set pan aside.

 

In a large bowl, mix ALL ingredients using a hand mixer until well combined (about 2 minutes or so). Roll the dough into sixteen 1-inch balls and place on prepared cookie sheet. Flatten the cookies using the back of a fork into a criss-cross pattern. Lightly dust each cookie with a sprinkle of zero calorie sweetener. 

 

Bake cookies in the oven at 350 degrees for 10-12 minutes. For a crunchier cookie, bake for 12-14 minutes. 

 

Remove the cookies from the cookie sheet and place them on a cooling rack to cool completely, or enjoy them warm! 

 

TIP: Try dipping these in a tall glass of unsweetened vanilla almond milk for a tasty treat!
