Quick & Healthy Chocolate Peanut Butter Icebox Fudge

Calling all chocolate lovers! This Quick & Healthy Chocolate Peanut Butter Icebox Fudge is the perfect easy snack or dessert. I have even eaten these fudge squares for breakfast before. These only take about 10 minutes to prepare, and you can store them in the freezer to have on hand when you're in a rush. Each fudge square has 96 calories and only 1.3 grams of sugar, and they are also high in protein and fiber to keep you full and satisfied for a longer period of time. Chocolate and peanut butter is one of my favorite flavor combinations. The creamy peanut butter layer sandwiched between two layers of rich, chocolate fudge will make you think you're eating your favorite candy bar - making this icebox fudge the perfect healthy alternative when you are craving something sweet! Ingredients:

- 3/4 cup Betterbody Foods PBFit

- 3/4 cup unsweetened natural cocoa powder

- 1 scoop Quest Nutrition Vanilla Milkshake Protein Powder

- 3/4 cup zero calorie sweetener (I use stevia)

- 3/4 cup unsweetened vanilla almond milk

- 1/4 cup creamy natural peanut butter

- 1/4 cup chopped peanuts

 

Directions:

In a medium bowl, stir together Betterbody Foods PBFit, unsweetened natural cocoa powder, Quest Nutrition Vanilla Milkshake Protein Powder, and zero calorie sweetener. Gradually add 3/4 cup unsweetened vanilla almond milk until a thick fudge forms and all the ingredients are well combined. Spread half of the chocolate fudge into the bottom of a small square pan (I used a 6-inch square pan). 

 

Melt 1/4 cup peanut butter in the microwave for 30 seconds. Spread the melted peanut butter over the top of the first fudge layer. Sprinkle 1/4 cup chopped peanuts over the melted peanut butter. 

 

Spread the remaining chocolate fudge over the peanut layer. Top with additional chopped peanuts, if desired. Place in the freezer for 3-4 hours or until fudge is completely firm. Cut into 12 even squares and store in the refrigerator or freezer for best results.Enjoy!
