Healthy Dark Chocolate Peanut Butter Blossom Cookies

The Peanut Butter Blossom Cookie is a holiday classic. At almost every Christmas party, you can find these delicious desserts as part of the menu. Peanut Butter Blossoms are my mom's favorite cookie (and I must admit, they are pretty tempting to me as well).


A traditional Peanut Butter Blossom is made using butter and brown sugar, two baking items that may be the culprits for many people's holiday weight gain. In this healthy version, I cut out all the "bad stuff" - leaving a cookie that only takes FOUR ingredients to make! - 1 cup creamy peanut butter

- 1 cup zero calorie sweetener (I use stevia)

- 1/3 cup liquid egg whites

- 14 dark chocolate Hershey's kisses



Preheat oven to 350 degrees. Line a cookie sheet with foil and lightly coat with nonstick cooking spray. Set pan aside.


Unwrap 14 dark chocolate kisses and set aside.


In a large bowl, mix ALL ingredients using a hand mixer until well combined (about 2 minutes or so). Roll the dough into fourteen 1-inch balls and place on prepared cookie sheet. Lightly dust each cookie with a sprinkle of zero calorie sweetener.


Bake cookies in the oven at 350 degrees for 10-12 minutes. 


Immediately after removing the cookies from the oven, press one dark chocolate kiss into the center of each cookie, allowing the cookie to spread out.


Place them on a cooling rack and let them cool completely, or enjoy them warm for a melted chocolate center.
