90 Calorie Clean Eating Blueberry Muffins
Top of the muffin to ya! I am super excited about this 90 Calorie Clean Eating Blueberry Muffin recipe. A lot of times, breakfast can be one of the most difficult meals to stick to a healthy diet. I mean, who wouldn't be tempted by those GIANT chocolate, blueberry, and lemon muffins sitting in the glass case while you're in line at Starbucks?! On the weekends, my mom usually bakes blueberry muffins for breakfast and they make the entire house smell like a pastry shop. This past weekend, I was really craving a moist, sweet blueberry muffin; so I decided to re-create the classic breakfast favorite with my own healthy twist.
A typical jumbo blueberry muffin like you may find at your favorite coffee shop can be around 350 calories, 12 grams of fat, 55 grams of carbohydrates, and 29 grams of sugar. Unfortunately, sometimes muffins are just cupcakes in disguise. These 90 Calorie Clean Eating Blueberry Muffins are low in sugar and carbohydrates, yet maintain a decent amount of protein to keep you full and satisfied all morning long.
When I set out to try and create a lighter blueberry muffin recipe, I really wanted to make sure that the muffins didn't lose their light & fluffy texture or lack any flavor. There are several healthy baking substitutes that can be easily used in your favorite recipes to make them lower in fat, calories, and sugar - but still full of flavor.
Some of my favorite substitutions used in this recipe:
1. Blanched almond flour for all-purpose flour
2. Organic coconut flour for all-purpose flour
3. Unsweetened applesauce for butter
4. Nonfat vanilla greek yogurt for butter
5. Zero calorie sweetener (I use stevia) for sugar
6. Unsweetened vanilla almond milk for whole milk
7. Liquid coconut oil for vegetable oil
