Starbucks Copy-Cat Lemon Pound Cake

This might be one of my favorite recipes YET. This Starbucks Copy-Cat Lemon Pound Cake is moist, dense, and even has a protein packed vanilla glaze drizzled over the top to re-create the Starbucks favorite with nearly 1/5 of the calories. With this recipe, you really can have your cake and eat it too!

 

A typical slice of lemon pound cake can be around 470 calories, 20 grams of fat, 68 grams of carbs, 42 grams of sugar, and only 6 grams of protein.

But this Starbucks Copy-Cat Lemon Pound Cake is only 90 calories per slice, less than 2 GRAMS of sugar, and has nearly 8 grams of protein. Yes, please!

I made this pound cake the other day during the afternoon and it was the perfect sweet treat to eat after dinner. I always have to end my meals with something sweet, so I like having healthy baked goods around the house to satisfy my sweet tooth without sabotaging my fitness progress. This cake can be stored in a tupperware container at room temperature for easy snacking when you're on the go.

Not surprisingly, I really love something sweet for breakfast as well. I have always been more of a fan of a sweet cinnamon bowl of oatmeal over something savory like an egg white omelette (although I still love them). So, I actually ate some of this lemon pound cake for BREAKFAST the morning after I made it. I popped it in the microwave for 30 seconds to create a warm, moist, dense plate of lemony goodness! The protein powder glaze adds a lot of sweetness and gives the cake even more moisture. Check out the recipe below!
