Valentine's Day Greek Yogurt Fudgey Brownies

February 14, 2017

Happy Valentine's Day! Today is commonly known for being one of the holidays that gives everyone an excuse to eat EXTRA chocolate and candy. I mean, heart shaped boxes of chocolate and sugary Valentine's candies only come in season once a year, right?

While everyone loves chocolate (including myself) we all know how easy it can be to eat more than our fair share on Valentine's Day. Brownies are one of my FAVORITE chocolate baked goods. Especially the kind that are dense, cakey, and topped with a rich fudge frosting! In honor of the holiday, I decided to give my favorite chocolate treat a healthy makeover. A typical frosted brownie can be around 190 calories and 18 grams of sugar; but these Valentine's Day Greek Yogurt Fudgey Brownies are only 54 calories and 1.3 grams of sugar each! Yes, please!

These brownies use nonfat vanilla greek yogurt as a substitute for butter and oil, giving them only 1 gram of fat each. I love baking with greek yogurt, because it is high in protein and adds some extra sweetness to baked goods.

Cocoa powder is one of my favorite SUPER FOODS. I eat cocoa powder almost daily. Whether I am mixing it into a protein shake, a bowl of oatmeal, or even combining it with some powdered peanut butter, I love incorporating it into my every day diet. Cocoa powder is loaded with fiber and contains high levels of antioxidants that have been proven to promote a healthy heart (perfect for Valentine's Day).

Because these brownies are only 54 calories each, they are the perfect sweet treat to snack on or eat as a light dessert following a meal. I even ate a few for BREAKFAST the morning after I made them (why not?). For all the chocolate lovers out there, now you can have your brownies, eat them too, AND stay on track towards your fitness goals. Check out the recipe below!

Happy Valentine's Day! Remember, you are so loved.
