Skinny Cinnamon Streusel Coffee Cake
I can hardly believe February is almost over! This month really flew by. I am just excited about all of the warm weather we have been having in Missouri lately - it already feels like spring!
Over the weekend I made this Skinny Cinnamon Streusel Coffee Cake, and it was completely gone by the time Monday rolled around. I really loved the way the Starbucks Copy-Cat Lemon Pound Cake I posted awhile back turned out, so I started thinking about different variations I could make of that recipe using similar ingredients. And here we have it! This is what I came up with.
Growing up, my grandma would ALWAYS have a fresh baked coffee cake at her house and it was always one of my favorite treats. I am a huge fan of cinnamon (maybe not as much as I love chocolate, but still), so coffee cake is definitely at the top of my list for breakfast sweets.
Just like in the Starbucks Copy-Cat Lemon Pound Cake, this coffee cake uses greek yogurt to achieve a dense, moist, cakey texture. Greek yogurt is high in protein and low in fat and sugar, making it a great substitute for extra oils that would normally be used in a cake like this. I also love baking with zero calorie sweeteners like stevia (In the Raw is my absolute FAVORITE). Unsweetened applesauce is another great substitute to add a little extra kick of flavor and moisture to healthy cakes and cookies.
I always LOVE eating a slice of coffee cake with a glass of unsweetened vanilla almond milk on the side. It really is the perfect combination! Try making this cake ahead and heating it up before you eat it for breakfast for a warm and sweet cinnamon treat. The streusel layer and topping is one of my favorite parts.
