Raw Vegan Chocolate Almond Pie
Calling all chocolate lovers! I am so excited about this Raw Vegan Chocolate Almond Pie for three main reasons:
1. It is COMPLETELY raw! All of the ingredients are natural foods. I love eating raw because I have found that my body just feels better when I eat foods that are unprocessed. They just taste so clean!
2. It only takes SIX ingredients to make. That's right, just six! The crust is my favorite part, because it is made entirely of almonds and dates.
3. It's fudgey, creamy, rich, sweet, and just all around DELICIOUS.
It also uses one of my absolute favorite ingredients in the world: avocados.
The possibilities are seriously so endless when it comes to making sweet treats with avocados. They are such a great substitute for butters, oils, and even different flours. They have the perfect texture and are pretty much flavorless when mixed with other ingredients, so they are perfect to sneak in to so many recipes!
Now, let's talk about fats. So many people are "scared" to eat foods that are too high in fat. Unfortunately, fats have gotten a bad rep in the world of fitness and they are JUST now starting to be realized as one of the best superfoods to fuel your body.
BUT: it's important to make sure you are choosing the right kinds of fats. Healthy fats like almonds, cashews, cocoa powder, whole eggs, peanut butter, salmon, avocados, coconut, flax seed, etc. are some of my absolute favorite options. Generally, healthy fats tend to be higher in omega-3s, which can help lower cholesterol and support a healthy heart.
I always include at least one source of healthy fats with every meal. I tend to eat on the higher fat/lower carb side of the spectrum, because I have found that when I eat more healthy fats I stay full and satisfied for a longer period of time than if I were to eat a carb heavy meal (I am basically a peanut butter addict!)
This Raw Vegan Chocolate Almond Pie is LOADED with healthy fats (19 grams per slice). It combines some of my favorites: almonds, avocados, and cocoa powder. This pie may be more calorie dense than some of my other desserts, but a little goes a long way when it comes to satisfying your sweet tooth and filling you up after a meal for a healthier dessert (or even breakfast) option.
Not only is this pie vegan, gluten-free, dairy-free, grain-free, AND oil free - it is also SUPER easy to make. I actually made the crust AND the filling in one single blender! Since it is raw, it doesn't require any baking, so once you are finished preparing it you can just pop it in the freezer or refrigerator until you are ready to devour it. Check out the recipe below.
