Cake Batter Protein Cookie Dough

This recipe is by FAR one of my favorites yet! I am seriously questioning why I haven't made something like this sooner because cake batter and sugar cookie are my two favorite dessert flavors EVER. I always go for the Birthday Cake Batter Enlightened Ice Cream - it is my go-to flavor! I actually made this protein cookie dough and topped it with Enlightened Ice Cream and IT. WAS. HEAVEN. I highly recommend giving it a try - it will make all of your healthy sweet tooth dreams come true. 

 

This Cake Batter Protein Cookie Dough may be the easiest recipe I have ever created. Literally all you do is throw everything in a blender and mix it all up until it reaches a cookie dough consistency! So simple, so tasty, and so healthy. My three favorite things that (in my opinion) every recipe should be.

 

The main ingredient in this cookie dough is... (drumroll)... chickpeas. That's right, like the garbanzo beans you would eat in soup or in a pasta salad! Chickpeas have very little taste and, when blended, the perfect consistency to make this dough almost identical to the real stuff. Not to mention, chickpeas are high in fiber and protein, which will help keep you full and satisfied for a longer period of time.

Another great thing about this cookie dough: it is gluten free, dairy free, refined sugar free, oil free, grain free, AND it can be made vegan by using a plant-based protein powder (use the code "BOWERS20" for 20% off on www.uniconutrition.com). I love eating foods that are made from real ingredients that just taste clean! Living a healthy lifestyle does NOT mean giving up your favorite foods. The reason I make so many healthy desserts is because I have a MAJOR sweet tooth and I just genuinely love eating desserts. I never have to deprive myself of the foods I love eating by re-creating them into healthier versions! It's all about BALANCE and finding what works for you and your body.

I am always trying to make desserts that are especially lower in sugar than the original version. When you eat foods that are high in sugar, they actually make you crave MORE sugary foods. It's like a cycle! I have said before that I rarely crave really unhealthy foods. Most of the time when I have a "cheat meal" it is on a food that is still made from healthy ingredients, I simply eat more of it than I usually would. I would actually rather eat this healthy cookie dough than real cookie dough - because of how it makes my body FEEL afterwards. Loads of sugar may give you a rush of energy initially, but sugar highs have to crash at some point; and they tend to leave you feeling tired and sluggish. 

 

The good news: this Cake Batter Protein Cookie Dough has no refined sugars! It actually only has 0.3 grams of sugar per serving (sprinkles not included). I prefer to use stevia In the Raw as my sweetener, an extract of the sweet leaves of the stevia plant. Stevia is my favorite sweetener to bake with, because it is zero calories, all-natural, and plant based. Check out the recipe below!
