Healthy Blueberry Crumble Bars


I am SO EXCITED about these Healthy Blueberry Crumble Bars. Kind of because this was one of those recipes that happened by "accident" - spontaneous recipes are the best recipes.

I went to my grocery store to pick up some fresh fruit and the blueberries were SO perfect! Like, imagine the plumpest, most vibrant, gigantic blueberries you can possibly think of - that's what was sitting on the shelves just waiting for me to buy.

I love this time of the year when fresh berries come into season. Strawberries and blueberries are my absolute favorite fruits! They are lower in calories and sugar than most fruits and they contain some of the highest levels of antioxidants. Talk about a win-win situation!

So anyways, there I am at the grocery store staring at these perfect blueberries, and I could NOT resist buying two containers. They looked too good to pass up! But then I realized: one person can only eat so many blueberries before they go bad.

I started to think: what kind of healthy recipe could I make with one of these containers of blueberries? I have always been a fan of blueberry cobbler. The cakey, crumbly crust combined with the sweetness of the blueberries just can't be beat! I wanted to create a yummy treat similar to this, but with less sugar, fat, calories, and more protein than traditional blueberry cobbler.

So, what do you get when you have a TON of extra blueberries and a sudden craving for a clean eating version of blueberry cobbler? That's right... These HEALTHY Blueberry Crumble Bars! I know we all live such busy lives that a lot of times it can be hard to find time to sit down and ENJOY a snack or breakfast that you can't just pick up and eat, so I decided to transform my healthy spin on blueberry cobbler into an easy on-the-go treat.

One thing I absolutely LOVE about this recipe: it has no added oils or refined sugars. Instead, it uses nonfat greek yogurt and unsweetened applesauce to achieve a dense, cakey texture and an extra sweet flavor. It seriously tastes like blueberry CAKE! I love using greek yogurt as a substitute for butters and oils when I bake because it is nonfat (free of added hydrogenated oils and processed junk), high in protein, and adds an extra boost of sweetness to any treat.

If you are following a dairy free diet, you can easily swap out the greek yogurt for an almond, coconut, or soy based yogurt. I always like to make sure the yogurt I am choosing is low in sugar, because some yogurts have more sugar per serving than ICE CREAM! I use Dannon Light and Fit, which has 12 grams of protein and 7 grams of sugar per 1/2 cup.

Another quick and easy swap: using coconut flour instead of regular all-purpose flour. I have been OBSESSED with coconut flour lately. Like, literally obsessed. Sometimes I like to mix it with powdered peanut butter and some almond milk and make a "coconut flour cookie dough" type combination. It is seriously SO good! I love the nutty flavor and thick texture. Coconut flour is PACKED with fiber (there are 5 GRAMS in just 2 tablespoons) and gluten free. I use Betterbody Foods' Organic Coconut Flour. It is my absolute favorite!

If you want to make this recipe COMPLETELY vegan, all you have to do is make these simple swaps:

Coconut or almond based yogurt instead of greek yogurt

Plant based protein powder instead of whey protein powder

Chia or flax egg instead of one whole egg

Making a chia or flax egg is SO easy and will give you the same consistency and flavor as using a normal egg would. You can either use ground chia seeds or ground flax seeds; both are great sources of healthy fats and fiber. To make a chia or flax egg, take 1 tablespoon of ground chia or flax seed and mix with 3 tablespoons of water. Throw it in the refrigerator for 15 minutes and... There you have it: a sticky, egg-like substitute!
