And the cheesecake obsession continues.
My love of cheesecake runs deep - if you couldn't tell. After I made the Greek Yogurt Double Chocolate Cheesecake a few weeks ago, I just HAD to make another flavor variation. So, what better than a PEANUT BUTTER SWIRL cheesecake?! Oh, and did I mention it's made with healthy ingredients, low in sugar, and packed with protein?
I actually eat this for breakfast. It's SO good and the greek yogurt gives it such a similar texture to normal cheesecake without the guilt.
My favorite cheesecake EVER: the Oreo Dream Extreme Cheesecake from The Cheesecake Factory. SO good. BUT one slice has roughly 1,640 calories and 150 grams of sugar... and yes that is ONE slice!
I would honestly rather have a "healthy cheat day." By this, I mean that when I do give myself cheat days, I prefer to just eat MORE healthy foods or desserts. Let's be real here, sometimes you just need a slice of cheesecake! I know I have days where I am craving ice cream, cookie dough, brownies - you name it. That's why I love creating healthy versions of these treats so I can "cheat" and have dessert without completely derailing from a healthy lifestyle. I feel so much better when I fuel my body with nutritious foods that still taste amazing.
This Peanut Butter Swirl Greek Yogurt Cheesecake is one of my favorite desserts yet. Maybe it's just my love of peanut butter and cheesecake talking, but it is seriously SO good! Peanut butter is one of my favorite foods anyways, so when you combine it with the flavor and texture of cheesecake - I. am. SOLD.

This cheesecake is super easy to make and store in the refrigerator all week for an easy breakfast, snack, or dessert. Since you do have to bake this cheesecake, it has to set in the fridge for 4-6 hours or overnight to chill. When it is ready, the texture turns out so creamy and rich - it is truly like you are eating the full fat & sugar version!
The foundation of this cheesecake comes down to three simple ingredients: vanilla greek yogurt, egg whites, and vanilla protein powder (I use Unico Nutrition - It's my absolute FAVE! You can use "BOWERS20" to get 20% off on www.uniconutrition.com). Then, I added some Betterbody Foods PBFit for a little extra peanut butter-y blast of flavor and swirled in REAL creamy peanut butter to create this rich, decadent, and HEALTHY cheesecake!
I topped mine with some homemade chocolate fudge frosting and drizzled some more peanut butter over the top. The homemade chocolate fudge frosting is SO easy to make and only takes 4 ingredients in an equal ratio:
- 1/4 cup unsweetened all-natural cocoa powder
- 1/4 cup powdered peanut butter
- 1/4 cup stevia
- 1/4 cup unsweetened vanilla almond milk (give or take - depending on the consistency you want for your frosting)
MIX it all together and pipe on top of the cheesecake for the ultimate finishing touch!
I could probably go on and on about the endless possibilities that come along with a dessert like this. The macros are SO fitness friendly it's hard to stop at just one slice! Check out the recipe below.
