My chocolate loving sweet tooth self is DYING. I repeat: DY-ING over this recipe.
1. Because it's chocolate
and 2. Because they are only 104 calories each. EACH.
They also taste delicious warmed up in the microwave - as a little side note.
I don't know if I have ever met someone who doesn't love brownies... I mean, what's NOT to love? My mom absolutely LOVES a warm brownie and ice cream, so I was super excited when she gave the stamp of approval on these sweet treats.
To get the stamp of approval from the brownie queen herself: that's when you know you did something right.
I made some Double Chocolate Sweet Potato Pancakes not too long ago and they gave me major inspo to create some brownies using sweet potatoes as the base ingredient too! The pancakes already had a pretty "brownie-like" texture, so I just tweaked the recipe a bit to make it even more dense, rich, and delicious.

Sweet potatoes are LOADED with fiber. They are one of my go-to sources of healthy carbs because they do not have as heavy of an effect on your blood sugar as a regular potato or, something like white bread would have, for example. They act as a great replacement for flour in this recipe and you do not even taste them.
These brownies only have 3 GRAMS of sugar each. Now THAT is what dreams are made of. They also pack in 6.6 grams of protein and 5.3 grams of healthy fats so they are perfect for a snack, breakfast, or even as a little dessert after a meal. Confession: I actually like to eat these for breakfast. No shame.
I use Unico Nutrition's vanilla milkshake protein powder in this recipe, but you could use their chocolate flavor or the plant-based powder if you wanted. My favorite flavors are the vanilla and the Birthday Cake (seriously SO bomb).

You can either top your brownies with dark chocolate chips (I use Enjoy Life - they are one of the cleanest chocolate brands I have seen and are dairy, nut, and soy free), or some chopped nuts, or BOTH. In this recipe, I included 1 tablespoon of dark chocolate chips in the nutrition facts.

This recipe is flourless, gluten free, dairy free, has no added sugars, has no added oils, and can easily be made vegan with a simple swap of the egg whites for a chia or flax egg and the vanilla protein powder for Unico Nutrition's plant based powder. Once these brownies are done, they will store in an air tight container for about a week which makes them perfect for an on the go snack or breakfast!
