Blueberry Muffin Protein Bites | Quick & Healthy Snack Recipe
I have been SO obsessed with making different flavors of energy bites lately! They are just so easy to make ahead of time and grab for a healthy snack on the go. These Bliueberry Muffin Protein Bites make the PERFECT breakfast or mid-morning snack. They are high in protein so sometimes I also like to eat them as a post workout treat.
"Blueberry muffin" has always been one of my favorite flavors to recreate into different healthy recipes. I absolutely LOVE blueberries, not only because of their fresh and sweet flavor, but also because of all of the health benefits they offer! Their deep, rich blue color means they are loaded with antioxidants and vitamins to fuel our bodies with the nutrients we need to take on a busy day. Not to mention, blueberries are a fruit that is very high in fiber (almost 4g per cup).
These energy bites use dried blueberries so they can be stored and preserved for a longer period of time. Dried fruit is a great option to include in quick, healthy recipes like this. However, if the option is available, always choose the reduced sugar or no sugar added dried fruit over the original. A lot of times, bags of dried fruit can contain more added sugar than we realize.
My favorite thing about these bite sized blueberry muffin treats: they pack 4.4 grams of protein EACH! Talk about the perfect way to fuel up after a workout! I always eat a pretty high protein snack after my workouts to satisfy my hunger and aid in muscle recovery. I always like to make sure my snacks and meals contain around 15 to 20 grams of protein, a decent amount of healthy fats, and are low in sugar. I used Unico Nutrition APOLLO vanilla milkshake protein powder in these energy bites. You can use the code "BOWERS20" for 20% off on www.uniconutrition.com.
Another great thing about these Blueberry Muffin Protein Bites: they only have SEVEN ingredients! That's right, only SEVEN. Most of these ingredients are things you probably already have in your pantry. These take less than 15 minutes to prepare and they are no-bake, so they are also SUPER simple and easy to make with younger kids. Check out the recipe below!
