It's that time of the year. Time to bring out the pumpkin spice flavored EVERYTHING.
I swear something about September, October, and November just makes me crave this classic fall flavor! Be prepared for an overload of pumpkin recipes these next few months. These Healthy Pumpkin Chocolate Chip Cookies are the first of many more to come!
I always love chocolate chip cookies, but during the fall season they are even BETTER with a burst of pumpkin spice flavor thrown into the mix. These cookies are gluten-free, dairy-free, have no added oils or sugars, and only 65 calories each. I am OBSESSED. I know what I will be snacking on for the rest of September!

Pumpkin is one of my favorite healthy substitutes for butter and oil to use in my recipes. The pumpkin combined with creamy almond butter gives these cookies a dense, moist texture without the need to add unnecessary saturated fats. Just make sure when you are shopping for ingredients, you get the 100% pure pumpkin and not pumpkin pie filling. 100% pure pumpkin will only have one ingredient: pumpkin. But canned pumpkin pie filling will have TONS of added sugars we definitely want to avoid.
Pure pumpkin comes along with loads of health benefits. It is definitely the superfood of the season! Pumpkin has been shown to:
1. Make you feel fuller (it is pretty high in fiber - mashed pumpkin has about 3 grams per cup)
2. Lower blood pressure
3. Benefit eye health
4. Boost your energy & balance electrolytes
5. Promote a healthy immune system
The list goes on and on! So, good news: there's no need to feel guilty about eating extra pumpkin this season.

I always like to include some extra protein in my healthy recipes. A lot of times, I end up eating these desserts as a snack or for breakfast and both are times I want to make sure I am getting enough protein to keep me full and satisfied until my next meal.
