Mini S'mores Protein Cheesecake Bites | High Protein Greek Yogurt Cheesecake Recipe

October 31, 2017

Happy Halloween! It's that time of the year: there is candy EVERYWHERE.

Chocolate, sweet tarts, fruit snacks, sour ropes, pixie stix - you name it. Halloween is without a doubt the holiday of CANDY.

According to History.com - the average American eats a whopping 24 POUNDS of candy every year. Yikes! I wonder how much of that is consumed on Halloween?

Added sugars can wreak havoc on the body. They are essentially empty calories with no nutrient content whatsoever, and overconsumption can lead to insulin resistance, diabetes, and weight gain.

Now, we ALL know I have a sweet tooth - especially when it comes to chocolate. I definitely consider myself a chocolate enthusiast! But there are ways you can have your sweets and eat them too - the HEALTHIER way.

I am a firm advocate for balance. If you want a bite of dark chocolate, EAT IT! Restricting yourself from the foods you love will only set you up to feel the need to over-consume them later. I love creating these healthy desserts because they allow me to satisfy my craving for something sweet without completely de-railing my fitness goals.

In all of my healthy recipes, I try to use ingredients that will yield a treat that tastes just as good as the original but without tons of processed, sugary junk. Most of my recipes are gluten free, no sugar added, and have no added oils.

These Mini S'mores Protein Cheesecake Bites are SO tasty and super simple to make. I have made greek yogurt based cheesecakes before, so I decided to put a spin on these and make them in to bite sized cups. That makes them taste even better, right? It definitely helps with portion control.

This crust only has five ingredients but it tastes SO much like a graham cracker base. Almonds, powdered peanut butter, and ground flaxseeds are three of the superfoods that come together to make this crust crumbly, delicious, and packed with flavor.

The CHOCOLATE FILLING (insert heart eyes emoji) is where the protein lies! It is seriously a protein packed gold mine. Each cup has 12 grams of protein EACH. Talk about the perfect breakfast, snack, or post workout meal. Greek yogurt, egg whites, and Unico Nutrition Protein Powder are the real MVPs of this filling.

Use the code "BOWERS20" on www.uniconutrition.com for 20% off your order. The APOLLO Pure Protein is my go-to and I use it in ALL of my healthy recipes that contain protein powder. The Birthday Cake and Vanilla Milkshake flavors are my faves.

You do have to bake these cheesecakes and let them chill in the refrigerator for 6 hours or overnight before you top them. But once you have done all the prep work, they are perfect to store in the refrigerator or freezer for a grab and go snack throughout the week. Check out the recipe below!
