Pumpkin Cacao Protein Pancakes | Healthy Fall Breakfast Recipe
This stack of Pumpkin Cacao Protein Pancakes is like a giant plate of warm, fluffy, fall GOODNESS. You know how I said I am a chocolate enthusiast? Well, I am also a pancake enthusiast. Especially when they are protein pancakes made from clean ingredients!
Not to mention - there are cacao nibs mixed in to the pancake batter for an extra kick of flavor. I am so obsessed with these and I have made them several times since I tested the recipe. They are so tasty and so easy to make!
The ingredient list is simple, clean, gluten-free, and PACKED with protein. There are 42 grams of protein in this whole recipe! I like to eat these as a post-workout snack. They are the perfect way to refuel after an intense morning workout.
Pumpkin is probably the most classic fall flavor and I love this time of the year because it is so easy to make healthy pumpkin recipes. Make sure when you are buying canned pumpkin you buy the "pure pumpkin" and not pumpkin pie filling. They are packaged similarly but the pumpkin pie filling is LOADED with sugar. The only thing on the ingredient list in pure pumpkin should be, well, pumpkin of course!

These pancakes only have 12.4 grams of net carbs. Net carbs are the total carbohydrate number minus the amount of fiber in a food. Fiber and sugar alcohols have a minimal effect on your blood sugar and since they cannot be digested by the body, they do not trigger an insulin response.

I always try to make my healthy recipes without any added oils or sugars. Nonfat vanilla greek yogurt is my go-to substitute for oils because it gives baked goods a dense, moist texture without having to add tons of extra calories and fats. Greek yogurt is simply yogurt that has been strained and condensed to have a thicker texture. I use Dannon's Light & Fit nonfat vanilla greek yogurt in all of my recipes (and it's also super tasty to just eat plain as a snack). I topped these with more greek yogurt, cacao nibs, chopped pecans, and my Homemade Pumpkin Pecan Granola.
