Starbucks Copycat Lemon Pound Cake | The Healthy Dessert Recipe You NEED To Try
I have shared this recipe before but it is worth sharing again. I am not exaggerating when I say this might be my favorite healthy dessert recipe of all time.
This Starbucks Copycat Lemon Pound Cake is 90 calories, has less than two grams of sugar, and nearly eight grams of protein per slice; compared to your typical Starbucks Lemon Cake, which has 470 calories and a whopping 42 grams of sugar per serving.
But we have all been there: you're standing in line to get your coffee at Starbucks and you can just feel that dense, sweet, lemon pound cake staring at you.
Sound about right?
Well, you don't have to resist your cravings any longer! This copycat recipe is 1/5 of the calories and still maintains a dense, moist texture thanks to Betterbody Foods' Organic Coconut Flour and Light & Fit's Nonfat Vanilla Greek Yogurt. These are two of my favorite ingredients to use when baking healthy recipes. Coconut flour is a high fiber, low carb substitute for all-purpose flour, and nonfat greek yogurt makes an amazing substitute for solid fats like butter or shortening.
TBH - I eat this copycat lemon pound cake for breakfast, as a snack, and of course, as a dessert. It stores pretty well in a tupperware container for about four days. If you want it to last longer, I recommend leaving the glaze on the side so the cake doesn't get soggy.
Speaking of the glaze, let's talk about this protein packed drizzle of goodness that is sitting on top. I use Quest Nutrition vanilla milkshake protein powder in this recipe, because I have found it gives the smoothest texture and the sweetest flavor. You can always leave the glaze on the side use it as a dipping sauce for the pound cake. Either way, its delish and packed with protein.
