The Healthy Cinco De Mayo Recipe You NEED at Your Next Party | Strawberry Mango Salsa & Guilt-free Tortilla Chips

Cinco de Mayo parties don't HAVE to be filled with tempting platters of unhealthy foods. This Strawberry Mango Salsa is one of my favorite recipes because it it made with so many bright, vibrant, and fresh ingredients. The flavor combination of the strawberries, mangoes, avocados, and sweet bell peppers cannot be beat! Oh, and - what's salsa without guilt-free tortilla chips? Check out the full recipes below.

 

Ingredients

For the salsa:

1 cup diced tomato

1 medium chopped yellow bell pepper

1 cup chopped red onion

1 cup chopped green onion

1 medium chopped fresh mango

1 cup chopped fresh strawberries

1 medium diced ripe avocado

2 tablespoons chopped cilantro

A dash of fresh lime juice

 

For the chips:

2 MISSION Carb Balance Tortillas

Nonstick cooking spray

Sea salt

 

Directions

For the salsa:

1. In a large bowl, mix together diced tomato, chopped yellow bell pepper, chopped red onion, chopped green onion, chopped fresh mango, and chopped fresh strawberries until well combined.

2. Gradually stir in diced ripe avocado and chopped fresh cilantro.

3. Squeeze the juice of 1 wedge of a fresh lime over the salsa and set aside.

 

For the chips:

1. Preheat the oven to 450 degrees. Spray a baking sheet with nonstick cooking spray and set aside.

2. Cut two MISSION Carb Balance Tortillas into 12 chips. Place on prepared baking sheet and top with a light coat of nonstick spray, a sprinkle of sea salt, and (if desired) a hint of lime juice.

3. Bake in the oven at 450 degrees for 8-10 minutes or until chips are lightly browned and crisp. Remove from the oven and enjoy warm with salsa.
