Oven Baked Garlic Zucchini Fries


Exercise or EXTRA FRIES?

These Garlic Zucchini Fries are SO good - and the perfect way to satisfy a salty/fried food craving. I usually only crave sweets, but I love making these and eating them as a side with some grilled chicken or a turkey burger.

Zucchini is such a versatile vegetable. There are so many ways you can use it as a substitute for carb heavy foods like potatoes, spaghetti noodles, lasagna noodles, etc. I love using a vegetable spiraler and making zucchini noodles! Top them with some natural tomato sauce, some basil leaves, and garlic seasoning and you have a delicious bowl of "zucchini pasta." I will have to write up a full recipe for this soon because it is SO good!

But anyways, back to these zucchini FRIES. One cup of sliced zucchini only has 19 calories; compared to one cup of diced potatoes, which has 116 calories. Zucchinis are also a lower carb veggie than potatoes, and the best part:

They are 95% water!

Their high fiber content and low calorie count makes them an optimal choice for a big, hearty plate of baked fries. I used FOUR whole zucchinis in this recipe to make two servings. Meaning, you can eat half of this recipe for just 110 calories and 20 grams of carbs.

Of course, what are fries without a creamy dipping sauce? With these Garlic Zucchini Fries, I decided to make a garlic parmesan greek yogurt dip. You can actually use plain greek yogurt as the base for any flavor of dip you are craving! I even like to use it as a "sour cream" type topping on a southwest flavored salad. Just make sure you get plain and not vanilla... I have made the mistake of accidentally using vanilla flavored before and, let's just say it did not turn out quite as tasty.

To make the garlic parmesan greek yogurt dip:

Combine 1/2 cup plain greek yogurt with 1/2 teaspoon garlic powder, 1/2 teaspoon chopped basil leaves, 1/2 tablespoon reduced fat grated parmesan cheese, and ground black pepper (to taste). Stir until mixed well and enjoy!

I always go for Dannon Light and Fit Nonfat Plain Greek Yogurt. It has 80 calories and 12 grams of protein per 1/2 cup serving and the texture is so smooth and creamy!

These are also super easy to make. All you have to do is cut up a zucchini, season them, and pop them in the oven and there you have it! A full plate of tender, savory, low carb fries. Check out the recipe below!
